In 2010 we decided to try our hand at making a natural and skin contact wine from Jurassic Park, home to the oldest Chenin plantings in Sant Ynez Valley. We were already making a very fine “traditional” Chenin here and thought the fruit was suited to the endeavor. 11 years later we are still fascinated by this delicious wine. Nothing other than grapes were added or used in its creation. The wild yeasts that were on the skins completed the fermentation and the anti-oxidants in the skins and seeds provided all the protection necessary during elevage and bottling. No sulfur was added to this wine at any time, nor was it fined or filtered prior to bottling.
